That's a fair point that I forgot about when writing - the provider will likely insist on some form of ID. With this you are not protecting against the provider or your government knowing who you are but more your home address being protected in the event of a data leak. Give it a go! I would recommend Samourai Wallet. For the ideal setup you would run Dojo (the Samourai Wallet backend) on your own node to avoid sending data to a third party.
