I could easily see convincing myself that ice cream is healthy, especially if it's got lots of nuts and is sweetened with honey or maple syrup, maybe some dark chocolate and fruit in the mix.
fruit and maple syrup i think are ok, nuts too, if they are crushed.
dark chocolate probably won't have much flavour because of the cold. also, honey tends to coagulate too much and ends up chunky.
--but then again, this is to say nothing about nutritional value.

There's a simple ingredient ice cream brand that makes a coconut milk mint chocolate chip ice cream that's sweetened with honey. It's pretty good.

When not making marshmallow ice cream, I usually get mine down to four ingredients: milk, cream, sugar, vanilla/flavor.
peach ice cream is really nice if you brown your sugar a little first (almost like a carmel).
cherry ice cream is good with almond extract in the cream, whole cherries stirred in after you churn.
One of the reasons I've really gotten in to making my own ice cream is the control I get over ingredients.
