In the Abyss, how do shop owners actually update prices so rapidly? Clearly they can’t be relabeling that often.

Price tags become meaningless and people become used to distrust whatever price tag (if present) and ask. Most serious markets removed all price tags and put signs instructing people to "ask to the cashier" for each product. Indeed, an early sign of recovery last year was the return of price tags.
