I think the intent isn't social engineering as much as novelty is more entertaining, which is why the majority of these are counter-stereotype.
Mm, I know someone who works at Disney and he says there is definitely a contingent of activists within the company that see it as their mission to do social engineering through entertainment. And they are explicit in their beliefs that lower profit is worth it to push the agenda.
I'd also argue that these counter stereotypes have become so common that they are actually stereotypical at this point. Especially the bungling dad, the strong woman, and the supportive gay friend.
