Be aware, right now there is a glitch in NWC, if you put it persistent mode it will break your node to restart. I informed the devs about it and they are preparing a new beta release. So better wait for beta2 release to test it.
That's why is beta, to be tested by those who knows what they are doing and report back to devs. But if you want to test it like that, go ahead.

Not using persistent mode means my phone kills it every minute, so that makes no usable scenario. If I find time to go on a compiling adventure then I'll test, otherwise I'll wait for beta2.
That's right. Also keep in mind there are 2 persistent modes: one for the lnd service, one for the nwc service.
I tried also to connect to SN (testing purposes), is doing the 1st step but the 2nd one failed. So I gave up, didn't had time to tinker it. But it should work, is just a full NWC string.
