NOSTR is a good step toward fixing social media and eventually long-form content. But, how would you fix email?
My main problem with email is that it is super-centralized now and Google have a stranglehold on it. They innovating on how many ads they can serve you, instead of making it better/adding value.
I tried hey and it was great, but the masses won’t pay for it and it still requires lots of trust. I want something like NOSTR, decentralized by design, no one can shut you off, and when with sats fighting spam and promoting good behavior.
Would abandon SMTB and build something new from scratch? Or what other ideas you have?
E-mail centralization is not a protocol issue.

Everybody who tried that have failed. Remember Google Wave? Hacking around existing de facto standard protocols is the way how world works. That's why we still use SMTP, we still use TCP/IP and we will also not replace Bitcoin with something else.

e-mail would need to change at the protocol level.
That aint happening.
And that's why I check e-mail only about once a week nowadays. I use an agent to push notifications for messages from a (very small) whitelist so that I don't miss a message that could be urgent, but the other than that it waits until I have the time.
