Wallet of Satoshi is one of the easiest to use, if not the easiest, although it's custodial, so I'd advice to use it at the very beginning, for learning about LN and practicing making and paying invoices, or for use with small amounts for day to day payments.
For larger amounts and keep learning, I'd advice using Phoenix, which isn't custodial but you don't need to open your own channels; ASINQ opens them to your wallet whenever is needed (you receive a larger amount than your current inbound liquidity.
Later on, you can go to a wallet where you manage your channels, like Electrum, for example, which has a desktop and a mobile version, and support several hardware wallets, and also allows you to connect to your own Electrum node.
First timers I too say WoS.
