Well, stackers, it's been a while.
I've been lurking around longer than I care to admit, zapping posts, reading threads and nevwer dropping a comment. Shame on me! That changes today, planting a flag here in ~food_and_drinks the way I wanted to.
With this post I'm kicking off a simple recurring thread: What did you cook this week? No rules, no gatekeeping, no Michelin expectations. Honest food from real kitchens freaks, not just the triumphs, but the mediocre, and the "I should have ordered out." experiments that went bad. So we can learn from each others and share tricks and improve the quality of our meals and consequently increase the happiness levels in our life and make people we love smile.
I'll go first: this week I finally nailed a sofrito base I've been chasing for months. Low heat, a lot of patience, tomatoes that had no business being as ripe as they were at the market this late in the season. Cooked it down until it was almost jammy, hit it with a splash of dry white wine, and used it as the foundation for a simple rice dish that tasted like it had been simmering since Tuesday even though it hadn't. Some weeks cooking feels like problem-solving. This one felt like listening.
Also made a very ugly but extremely tasty lentil soup that I am choosing not to photograph.

Steak and eggs
Simple, easy and hyperproteinic! That's on my menu too! Our eggs come from the neighbor freerange farm, yours?
My eggs are from the grocery store.
If they have orange yolks are good, that's what my granma say.
I've been making sandwich wraps which is new to me. It takes up a lot less room than anything else in my office fridge and spares me all mess and volume of bread. Plus wraps/sandwiches can be eaten cold.
Often it's meat, cheese, and butter or avocado oil mayo. I'll use a burrito sized cassava/wheat flour tortilla that's really good for store bought.
That's a really yummy solution for a quick meal. I used to do so too. Is a time saver, substantial and nutritive. I'll pair it with a smoothie and get top performing afternoons.
