I don't understand why it had to be a single address. Why not a crowdfund on a BTCpay?

One step at a time. Holding funds for her was a non starter, I wanted her to experience self custody.
Most wallets still do not support bip47 so that wasn't a good option.
Expecting her to run a btcpay server at this point is incredibly unrealistic.
