You are wrong, there is no usage pattern that mitigates the trusted coordinator's powers: Whenever a user is selected for a coinjoin round, the coordinator can insert 4 Sybil coins as the target's peers, silently deanonymizing them.
Entirely false to say this "deanonymizes" the "target". Users don't get seleted for coinjoin rounds. UTXOs do. If a UTXO's source is somehow already known to the coordinator, then sure, it could follow that UTXO into the future via the means you described. Proper usage mitigates this.
But even if you didn't exercise proper privacy practices, of course, the coordinator would have to do this sybil attack for every round of coinjoin that the UTXO is selected for. When you start to do the math on that, it would require incredible resources to keep up after just a few rounds.

A coinjoin is any tx that contains inputs from more than one user. A channel splice is a type of coinjoin.
I can coinjoin with 3-4-5 of my own wallets.
