I always disliked the metal/gold coin with the B in the middle myself. However, I am a fan of the B design in general. I have no ideas in how to better represent Bitcoin unless it's a person scanning a QR code with their phone that has the B logo in it, representing a lightning payment to a merchant in store.
You're right, the ₿ symbol is neat and really can't be improved on. It's just the limited number of stock photos of coins that give the wrong impression that it's something you can hold.
One good idea is for someone to create a 'Creative Commons' type of website where people can pseudonymously upload their images of Bitcoin with a copyleft attribution so that people can reuse them. Maybe scraping the geo info off the image for safety too.
People could also upvote and send sats to the ones they like most.
