To help organize the posts, it could be cool to be able to put tags on posts. wdyt?

I'd say keep it simple at least for now, and not rush adding features which aren't absolutely necessary. Features tend to add friction and bloat to UX. Good content is all we need.

lobste.rs has a limited tag system that works well. Might be worth starting from there.

I grow up with tags and ended hating it. Best case scenario limit tag to a post.

are you imagining only the original author could add these tags like on Twitter or would they be community contributed like on Quora?
do you believe there would be enough volume today in any given tag to make consumption via tags an important interface for users?

I image it more like on twitter to start simple. In a second step having it as a collaborative mechanism.
Regarding the current volume, it seems already interesting to organize the post to be able to retrieve them later. For me, right now, SN is good for the immediate consumption but not easy to look for past posts. My 2 cts.

I saw another post also asking for hashtags, I don't know which would be better for curation, I assume boards could be tags/subreditt would be cool

Missed the other post. If you could follow the RSS for a tag, it would help following specific subjects.
