Indeed. Never enter a restaurant at hot spots, 99% won't be worth it. Learned this a long time ago in Rome with a cannoli that was, well, not a cannoli. Always going into the smaller, hidden streets and looking for locals is indeed the way.

Absolutely. 100% agree. Some of the best restaurants here in Spain You will find deep in the barrios, best food (beer and tapa for 1,50 euros!!). It's like having a time machine.

Yes, generally they are family-run businesses, and not just restaurants, I found family businesses / old shops are normally a better experience than the new ones. ( some new ones are still good, but just a tiny few of them..; also it must also meant something why these old shops "survived" till now )
But how funny that people used to do what they enjoy then slowly get bigger and became a business, yet in modern days, many businesses are chasing whatever makes more money, founded by blah blah blah MBAs, raised VC funds, with beautiful ( makeup ) data, and most likely short-lived.
