For me this is one simple thing to point at:
Why use ethereum when you can have the same thing but on bitcoin? And so forth.

devils advocate: the market for "legitimate" payments using bitcoin for real goods and services does not exist yet or its very small. i know its kind of a chicken and egg problem, but still.
this could also be seen as a sly round about way to generate liquidity in lightning and eventually the real goods and services will follow. this has been ethereums strategy and it has not, not paid off

It doesn't exist near you because it's YOUR fault. You must drive the merchant adoption, not keep supporting them by paying with the shity VISA card.

tiramisu is not affiliated with Lightning Labs.
As for Taproot Assets protocol - yes it is build for stablecoins and collectibles. Now it is popular with the ordinals community.
