I have to say, I absolutely could not put The Big Fat Surprise by Nina Teicholtz down, once I started. Mind blowing how completely consumed society is with the message that saturated fat/meat/animal products are bad, based on really weak evidence, and lots of evidence to the contrary.
So I'd say, definitely read that one. Or also - she's done a ton of interviews, they're great as well, if your reading list is long.
Also @benwehrman turned me on to the Plant Free MD podcast. There's some great interviews there.
