Makes a lot of sense in the heat of the South!
Less so in the North of Spain, but also there you'll find many houses buildt like that. Been there 3 times, will get around to posting pictures later on, deserted, magically looking villages :-)

They are so surprisingly pleasant in temperature. They also make a lot of sense in spanish culture where people hang out in cafés, vinotheques, the beach etc. I don't think modern americans would be happy living in these the same way.

Even in the US, there are many cave houses, and I'll tell you right now that I wouldn't mind having one, because they're very comfortable

I wouldn't mind living in one of those. But there's no doubt that caves are a good place to build a house, especially in very hot areas like southern Spain.
