I'm a big guitar fan aswell. One of my favourites being Carlos Santana. The dude may to some people be too similar in his style each time, but to me, he's great.
I need to listen to him a bit more, I know he's definitely good. I've always enjoyed Steve Lukather's playing on all of the Toto albums. He's not a super fast technical player like some, but his solos make me smile! I wish I had even a quarter of his talent in my own playing.

I haven't played in donkeys years, perhaps I should get back to it at some point, but I always loved the simplicity of some guitarists like Clapton, Santana, they kept it understated and understood that less can sometimes be more. Don't get me wrong some guys like Alexi Laiho (RIP) were phenomenal guitarists and one of my own idols in guitar but for very different styles.

I sadly haven't buckled down and tried to learn new things in a while, but I still like to grab one of my guitars and pick around every now and then! I try to do too much sometimes and certain hobbies fall by the wayside.
I really enjoy Clapton's playing, Slowhand is my favorite of his albums. I spent a lot of time learning Wonderful Tonight when I first bought an electric, it's such an expressive guitar song. I definitely agree with you on the simplicity sometimes being better. I find many guitarist's playing impressive on a technical level, but not all of them make me feel anything other than that. If that makes any sense!

Totally makes sense. It's hard to describe. Sometimes I want intricate fast complex solos. Sometimes I just want the guitar to sing. It's very mood dependable.
