I'm wondering if there are any plans for an Umbrel self hosting app for Mutiny similar to that currently available on Start9? I guess I should direct this question to @TonyGiorgio and @benthecarman.

No, umbrel has a very unsecure platform. They would only allow us if we disabled many browser security features.

MoneyPrinterGoBrrr is changed by any sane user after first login. 2FA is available, so no, stealing raspi won't be enough. But yes, a hacker guest with wifi password can sniff traffic with wireshark and maybe get the real password (I could not, must be hashed).
