There’s

• Fischer (Fixed amount of time, you get some time back when you make your move)
• Byo-yomi (Fixed amount of time, after which you have a fixed amount of time to make a move)
• Simple (Fixed amount of time per move)
• Absolute (Fixed amount of time for the whole game)

I prefer byo-yomi myself.
