Before we have a standard a Unicode version of the Sat emoji, I found some similar ones that can be used in UI. Which one below would you prefer?

Just use the lightning bolt emoji/icon.

Satsymbol, the first one, is the best. Represents a stack, looks like a monetary symbol, has good, positive meanings.

The first one, it's the closest to sat symbol @rkfg mentioned.
Reminiscent of the Japanese aesthetic, the closest character being 丰 meaning: "Bountiful - abundant, lush, bountiful, plenty, luxurious growth of grass" which suggests a vast amount of Satoshi are still left to mine. This symbol has been adopted by multiple Bitcoin services including satoshilabs.com (Trezor), SatoshiCap.net, pricedinbitcoin21.com, Thunderhub.io, bitcoinicons.com, thebitcoinmachines.com, and many more.
The second symbol looks like bricks - (BRICS nations) that might possibly come up with their own CBDC.
The rest are just lines. If we're going this far, I would rather prefer something like this: シ
