The multiple season format is what I like the most, but sometimes it's what disappoints me the most... but it's the risk I'm willing to take.
Breaking Bad had many episodes per season and is one of my favorite series.
The biggest problem I identify in long series is that sometimes the story being developed doesn't contain many episodes or seasons.
True!! The other problem is that they may loose their best writers to other projects, thus, leaving the story line in their heads only.
George R. R. Martin comes to mind here.

You are absolutely right... Game of thrones is an excellent example. David Benioff and DB Weiss centralized everything for themselves and we saw what happened

Yeah, everything went to sh*t in the last two seasons!
But, you can’t really blame them, because Martin never finished writing the books.
What he did write and what the others wrote didn’t mesh well and missed some of the intricacies Martin was used to writing into his novels.

Yes, a lot of things influenced it... the pressure from the executives, the unfinished story and other problems, I just think they took on too many responsibilities and they could have hired more writers

Maybe one of their constraints was the budgeting problem. However, seeing that it was a big hit, there should have been plenty of budget to go around for hiring new people to replace their efforts.

As you mentioned earlier... if George R. R. Martin had finished his story, everything would be different!

Probably much different, given his experience as an author and developing the story from scratch.
