Regarding nodes and consensus, can I set up my full node and let it run forever without worrying about updates, or should I always be aware of changes, no matter how long they take?

Bitcoin node software doesn't usually auto update, but there are updates with some regularity.
Luckily updating your node software doesn't involve re-downloading the whole chain. So updates are usually pretty quick and easy.
