If you feel happy from your own viewpoint of the consensus and mempool rules, does not upgrading Bitcoin Core until the time you feel like it makes sense to yourself a valid action to take at present?

Absolutely. Bitcoin Core does not have an auto-update feature, because the users should always consciously choose which rules they want to enforce.
I would recommend running a maintained version though, if your node is part of any wallet infrastructure. Even so, you can run one of the two latest major branches.
