I'm trying to test out a multisig setup in Sparrow, without having to get a bunch of hardware wallets. I thought I'd be able to just scan a wallet on the Blue Wallet app, on a phone, just for testing. But no, the options are just the standard wallets (Jade, Cold Card, Passport, etc.).

What other options are there, just for playing around with this? I know I could do a software wallet in Sparrow, but that's not quite as "realistic" as I'd like.

There's the SeedSigner, that could be used too. But is it just not possible to use a phone app?

Try nunchuk

Have you been successful with this? I'm just not seeing how the steps go together. Doing a test create key, create wallet, that works fine, but then when trying to actually use that in Sparrow as one of the signers, it doesn't appear to be able to export the xpub? Maybe I'm missing something.

Select wallet, view wallet config, three dots in upper right, export wallet config, qr code.

Open sparrow. New wallet select camera next to descriptor, scan nunchuk qr.

When sending, create the txn in sparrow, show qr. Go to nunchuk, select wallet, three dots in top right, import transaction, import via qr. Scan the sparrow qr. Sign txn, three dots in top right, export txn, qr, scan with sparrow.

How will this work when it launches, for instance using Sparrow? Will it need a new release of Sparrow, in order for it to work?

It seems like it might need to show up as an airgapped hardware wallet, and there's a set list of those, it includes things like Seedsigner, Passport, etc.

The reason is probably that Bluew Wallet cannot simulate an airgapped signer (like hardware wallets which are designed to do this).
You can export the same format xpub/zpub with Blue Wallet, but cannot sign by reading in PSBTs.

The cheapest option to test is likely a Seedsigner which can work with multiple seeds temporarily.
