How do you decide who to open a Lightning channel with when you run your own node?
Is your decision based on the nodes you use frequently — for example, if you use an exchange and withdraw via Lightning, do you open a channel with them? Or do you prefer to decide based on how well-connected the other node is?
It depends on what the purpose of your node is in the first place. It's a public routing node or a private node running on Tor?
Covering this cashsatsout from exchange case, you maybe want to use a proxy middlenode that is well-connected to the exchange and other nodes too, just in case SHTF.
In either case, remember that when you generate an invoice, your node pubkey will be included in it.

Just open another channel whenever you know you are going to need more liquidity bandwidth.
