I guess a better analogy would be: you got to hitchhike as a VPN.

Yep...
Actually this is a GREAT analogy for VPNs. Uber is like most VPNs. Tracking everything you do. When you use a VPN you are just moving your trust from your ISP to the VPN provider.
Same goes for hitchhiking. That's more like using something like Mullvad.

That's got to be the Tor option, no? I'm certain Uber tracks the hell out of it's customers. The real question is whom they sell the data to.
