So, here is the scenario.
I have been using a trezor one to keep the bulk of my cold Sats for sometime. But recently,
  • I saw some reviews of Trezor seven and keen to upgrade
  • I kinda orange pilled someone to get started with their Bitcoin journey, just by coinos and some mobile wallet
So I was thinking of giving him my old trezor one (perfectly functional) and upgrade my to Trezor seven.
The question is, is it possible to do what I can call an NSA level wipe of the old Trezor before giving it away (so that the new owner can build his own wallet using it)?
Or will the old trezor remain a permanent backdoor to my stash no matter what I do?
It doesn't remain a backdoor to your stash after factory reset, but it's bad practice to use second hand security devices. So you're putting your friend off on a bad start if they just got orange pilled and then they don't learn how to buy security devices. They'd be putting all their trust in you that you don't rug them.

factory reset should do it, if ur more concerned above that then destroy the device and don't give it away imo.

Trezor is open source, so if you're technically skilled enough you can analyze source code to answer your question. In all other situations there's a tutor how to wipe data from your device https://trezor.io/guides/backups-recovery/general-standards/how-to-wipe-your-model-one
