According to you, is the increase in Bitcoin adoption a move toward centralization? If Bitcoin becomes a global means of payment and is next to fiat it'll be a kind of centralization. I'm not talking about on-chain centralization of course. What do you think about this?

No, adoption will not create more centralization, they are independent variables. Nevertheless, many people will will opt to have custodial accounts, other will have a mix and others will opt to self-custody of the funds.
The important bits is that bitcoin will always give you the freedom to control your money (if that is what you wish). In a way it works like physical cash/coins, but fit for the digital world.

I highly doubt that adoption will make Bitcoin centralized. As long as no one can touch my Bitcoin for me it is 100% decentralized

No it is't. Adoption increases the amount of people on the decentralized payment network and decreaces the amount of people in the centralized fiat system
