It's short for "pay to public key" -- the original bitcoin address type was this style, the simplest payment style.
Now-a-days there are lots of alternative payment styles. A semi complete list is here:

The common ones you see these days are p2pkh and p2wpkh. Eventually the taproot variants will take over as the most common.
