As always, the empire projects its own sins onto others. Rule of thumb, when the EU or the US claim any bullshit about any of their geopolitical enemies, you can take it to the bank that it's in fact what they're doing, and they're diverting from it by trying to paint their enemies as offenders. There are literally a thousand examples of this, from press freedoms and human rights abuses and use of banned weapons to genocide.
Don't help them with their bullshit story of "but look, our enemies are even worse, so yeaaaah this may be a bit much, but would you rather support (insert any enemy of the day here)?!" this is the playbook. Don't play along.

You forgot to mention that they will also collect the payment method, card number or bank account number or mobile payment solution, card holder's name, expiration date...
This also applies to car rentals.

Is the European Union not requesting biometrics of some kind for non-EU citizens. I might be wrong but this to me seems the greater infringement.

I just went to Spain for the first time, and I was surprised how little they checked me at customs. Literally zero questions asked. Just stamped my passport and handed it back.
Normally, I'm at least asked how long I plan to stay. Spain was nice. I wanna go back and spend longer.
