I'm aware it's a desktop thing, and we can freeze addresses on the mobile version. But I'm really curious about the justification for not having it on Android. Is it just too much of a pain to implement?

There is.
Click on the address and look down the bottom. There's an option to freeze address.

Say you've got a thousand addresses and you just wanna send from two of them. How do you pull that off on the Android app?

Freeze all the other addresses. Though that would be very tedious if you had to freeze 1000 addresses one by one.
