There's not enough of them, and they don't have enough wealth
Perhaps the main point is is that to eat the rich, you would be also eating their businesses, thus disemploying their employees. That just makes everyone poor and miserable.

It's not just that, but they probably have the most elastic wealth as well

Perhaps the wealth is only as elastic as the company they run. Take the stock and shut down the company and there is no more wealth and a lot of newly unemployed. But, eat the rich, anyway! :)
