Good cooking for a piece that I imagine is quite fibrous. It must have been very tender, with the right seasoning it's incredible.

In the end, your method seemed delicious, nothing to add. Leaving it in aluminum foil cooks the meat a bit, but it's tender just the same.

It made me hungry.
