You could be updating the channel balance between you and another offline party.. But if you stay offline for 2 weeks you might have missed the other party having secretly closed the channel at an early balance.

Maybe when we all have watchtowers in place for our channels, they could keep doing safely for both parties for a long time, if they were disconnected from the Internet, but the Internet was still a thing somewhere else. :-)
