Aren't 2,500 uBTC 250,000 satoshis?
I mean, micro-something is something times 10^-6 so 1 uBTC is 100 satoshis:

So 2,500 uBTC should be 250,000 satoshis, no?

Ok, I just created a lightning invoice for 250k sats and the prefix is 2500u
I guess I found a mistake in the book
