I don't get it. Bluetooth-based connectivity networks? That's too vague. What's it used for?

The primary users of BLE networks today are logistics providers. For example, you can search the news for 'bluetooth' and 'smart label', and you'll see a dozen or more press releases in recent months.
Likewise for owners of high value assets who are struggling to recover them in scenarios where they go missing - BLE provides a much needed low power connectivity protocol, and BLE devices can now connect back to the internet via your Umbrel server/gateway.

Looking at the site I don’t think having this on my node will be much help to anything

By making a gateway from your home server, you're helping contribute to Bluetooth-based connectivity networks. Think of it like a mini cell tower from your server.
The primary risk is investing in new Pi's / Umbrel servers and longer range antenna attachments without necessarily having a lot of participating network devices within range of your server.
