You don't need to tell the employee that you want to pay with bitcoin when you want to spend bitcoin at a store that uses Square and has the bitcoin payment option enabled. You do not even need to mention bitcoin to the employee. You just click the toggle button on the top left and it'll switch the payment method from fiat currency to bitcoin and it will show a lightning invoice QR code for you to scan.

On Square Register, buyers can select bitcoin as a payment method directly from the customer-facing display during checkout. The seller must already have bitcoin payments enabled for this option to appear.
  1. Ring up the sale on the seller-facing display and tap Charge.
  2. On the customer-facing display, the buyer selects Bitcoin from the available payment methods.
  3. A Lightning Network QR code appears on the customer-facing display.
  4. The buyer scans the QR code with their bitcoin Lightning-enabled wallet from their mobile device.
  5. Once the payment is confirmed, both displays show a confirmation and you can issue a receipt.
Note: The buyer-initiated bitcoin payment option on the customer-facing display is only available on Square Register. It is not available on Square Terminal, Square Stand, or mobile devices.
