Great breakdown. I hadn't looked into the WooCommerce plugins yet, but the Alby and Cashu plugins sound promising for the online side of DataSense. Zaprite might be a bit much right now if it's paid, but good to keep on the radar.
If it's in person, it's very easy to use Zeus (i've used it as POS in person before and was pleased).
