Someone might leave coins in for longer periods of time. Also in the case of join market and wasabi its possible to consolidate multiple inputs out, as well as breaking a UTXO with a spend out.
It only draws attention if you want to send a conjoined UTXO to an exchange for fiat.
I still think coinjoins are a useful tool for medium to large TX. Routing 1 BTC through the lightning network is possible but you'd be routing through large exchanges and who knows what kind of logs they're keeping.

A routing hop only knows the inbound and outbound channel, not the origin or final destination, can also break that 1 BTC up into multiple parts
From a Sybil of the Lightning network perspective though this reinforces the point you should peer with economic peers rather than arbitrary hubs, there is a centralization trend here that's not good, but it's still less centralized than a join

If people are just withdrawing -> reciever -> exchange then sure, but add one organic middle receiver and that breaks down. When you actually use coin for commercial activity, every time it changes hands, it becomes less attributable.
Coinjoins are just recycling, not actual usage. Coin in Coin out is obvious because of the recycling, and draws attention all it's own because of the paradox.
There is no shortcut, no coordinator making a vig or crypto-theater solves this problem. It'll only be solved by lightning and real economic activity... And even then really only for individuals and medium businesses, state or institutional level movements are transparent by design, the privacy balance has flipped.
