Agree with most of the thesis. One question, why those businesses choose Lightning rather than stables for that? (Privacy is the one point LN beats USDC)

Privacy as a feature depends on the threat models to that privacy. A merchant that needs to sell either at a KYC exchange to cover expenses isn't leaving much on the table.
