A book like the one I wrote (Bitcoin Hands On) is the way I would have loved to be able to learn about Bitcoin, at the beginning of my journey. That's for technical/self-custody part, anyway. It has (without much detail, until you need it) a set of step-by-step exercises in setting up wallets, backing up, restoring, sending and receiving, etc.
For the "Why Bitcoin" aspect of things, The Bitcoin Standard by Saifadean Ammous was amazing. That sent me down the rabbit hole.
