Email is far from perfect, but still very useful.
You should avoid Gmail and Outlook as much as possible and specially you should avoid linking your identity to them.
What other do you suggest for privacy? Protonmail?

If privacy and security are very important ProtonMail and Tutanova are good choices.
Otherwise, any other smaller and independent provider (such as Fastmail, Librem Mail, Mailbox, etc) are better than Gmail and Outlook. The choice would then depend on your preferences.

Protonmail isn't a spook honeypot? Not sure if it's just fud and been debunked, but I heard it mentioned couple times.
