I think the best option is sparrow/electrum offline wallet. You can create a wallet with Tails in a offline pC. With the offline pc you can see de pubkeys and never filter anything about your key on internet.
PC or mobile app?
For PC I can recommend eletrum, sparrow wallet. For mobile - OBW (onchain/lightning)

That question is difficult to answer. I thought that the best option was Muun Wallet (I like it), but in this Platform, as I have been reading in other discussions, not many agree with me in that opinion. Then I do not know.
