Breez is also super simple in that sense. That’s my Go To these days.

Yes, I have used Phoenix a little bit and I agree that their built-in channel management makes the experience much easier for newbies like me!

-On this point, have you checked out or used Phoenix, Breez, Blixt or Mutiny wallets? These wallets enable users to hold their keys, but they provide node solutions and have built-in LSPs for channel/liquidity management. From what I can tell, the average pleb will have a really hard time maintaining the end-to-end operation of an LN node.
