Ingredients for the crust: 1 1/2 cups graham cracker crumbs 1/4 cup sugar 1/2 cup melted butter
Ingredients for the filling:
4 packages (8 oz each) cream cheese, softened 1 1/4 cups sugar 1 teaspoon vanilla extract 4 eggs 2/3 cup sour cream 2/3 cup heavy cream 2 tablespoons all-purpose flour Pinch of salt
Instructions:
Preheat the oven to 325°F (160°C). Line the bottom of a 9-inch (approximately 23 cm) springform pan with parchment paper.
In a bowl, mix together graham cracker crumbs, sugar, and melted butter. Press this mixture onto the bottom of the prepared pan to create the crust. Bake for about 10 minutes and let it cool.
While the crust is cooling, beat the cream cheese on high speed until creamy. Add sugar and continue beating. Add eggs, one at a time, beating well after each addition. Mix in the vanilla.
In a separate bowl, combine sour cream, heavy cream, flour, and a pinch of salt. Add this mixture to the cream cheese mixture, beating on low speed until just combined.
Pour the filling over the cooled crust. Bake in the preheated oven for about 1 hour, or until the center is almost set.
Turn off the oven, leave the cheesecake in for 1 hour. Remove from the oven and let it cool completely before refrigerating for at least 4 hours, or ideally overnight.
