Its easier than you think.
3 cups milk 1 cup heavy cream 7 eggs 2/3 cup sugar 1/2 tsp Nutmeg 3 Cinnamon sticks 1tsp Vanilla
  1. Put cream, milk, cinnamon sticks, nutmeg, and vanilla in a saucepan. Heat it up until it is steaming and there are little bubbles all round the edge.
  2. While the milk heats, separate the egg yolks from the whites. Put the yolks in a big bowl and whisk the dickens out of them. Add the sugar and go to town whisking again until it is much lighter in color and thick.
  3. Once the milk is hot, take a cub or ladle and use it to dribble some of the hot milk into the egg mixture. Go slow and whisk the whole time. Do this until you've moved at least half the milk into the egg mixture. Then you can just pour the rest of the milk into the egg mixture and give it a good whisk.
  4. Let it cool on the counter and then take out the cinnamon sticks and put it in the fridge.
  5. Serve it cold. Add a shot of bourbon or rum if you like it (gin is nice too).
Notes:
Fresh grated nutmeg really does make a difference.
You can add the egg whites once its chilled and then give the whole thing a very vigorous 30 second shake if you like it frothy.
