The brain needs fat, I agree. Carnivore diet is too restrictive in my opinion. Why cut out a whole macronutrient?
Carbs are not evil.
Sure maybe you can adapt modestly and feel better when you're training but it's not optimal.
Eat some granola an hour before you train versus fasting or being on the carnivore diet and tell me which feels better?
I already know the answer because I've went through all the stuff myself.
It takes less work for your body to turn that granola into ATP for your muscles.
But I'm happy you're on the right track and thinking about your health.
