How do you count lightning channels or other multisig utxos?

Depends how many keys you hold. Lighting channel would be ½, a 2of3 multisig where you control 2 keys would be ⅔, etc., etc.

3 Total: 1 single large one that is my real "stack" that was consolidated during low fee environment, life savings UTXO. 2 medium sized ones that are big enough they will not become dust but also aren't so big that if I spend them and "dox" their totals that I would have to worry about people trying to kidnap, blackmail, or extort me if we 10x from here.

privacy versus other risks such as losing access, too many small UTXOs and going to dust or just paying out an uncomfortably high % to fees in the future in a higher fee environment are tradeoffs everyone must make for themselves. I just want more people to thoughtfully weigh their options and make a conscious & active decision. Personally I place security and the ability to pass BTC to my grandchildren as > any other consideration.

I'm happy I created a couple large (from my perspective) long before I've studied how UTXOs work
To keep stack large UTXOs I should ignore safety and store some sums on the exchange
