This has been known for a long time but it’s always a depressing finding to encounter.

Yeah, I think when, why and how we eat is in sum way more important than what we eat. Or what we eat solves itself when we make ourselves aware of the other three things.
For example, when I did an unplanned OMAD diet1, I realized that I ate way more healthy since when I know it's the only meal I'll have per day, I don't want to eat junk food since I know I'll feel like crap for the rest of the day. And when I had a good meal, I didnt feel like eating anything else anyway so when I was done, it was basically like ticking of a todo and continuing with my day with no thought spent on food anymore.
Losing weight was basically just a side effect during this phase in my life. Before, I just ate when I was bored while watching or reading something. So I basically had to solve why I am bored, not necessarily what I'm eating. It fixed itself.
One can argue if that phase was very healthy but I felt a lot better. I basically planned more time for exercise (bouldering) than eating, lol. I was probably closer to the ideal balance between food and exercise than ever before; the ratio between food and exercise was just flipped, I think.
Since currently, I want to live as much as possible on a bitcoin standard, I naturally eat less and more healthy again since I don't want to spend my precious sats on food that I know is not good for me haha

  1. Which was basically just eating whatever I want but within a one hour time window. I simply didn't plan time for eating and I liked how much money I was able to save. I think I only spent between €100 and 150€ per month on groceries.
