Clearly still some confusion on my side - If I install a phone app, then I need to put in my nsec, right? And I am just trusting that they aren’t saving my nsec in their own database?

Yes it is common practice to do this - for the time being. Yes its a bad idea and yes there are people working on solutions.
But no biggie. Just treat your key as if it could be compromised and act accordingly.

You Pablo's nsec Bunker ot even Alby to enter the nsec once and then use those apps to log in to multiple clients.
